This revolutionary Steak House & Club concept comes to break paradigms in the effervescent gastronomic center of Casco Viejo for its authenticity and originality. Under a modern cuisine approach with Panamanian ingredients, Primitivo’s proposal perfectly combines prime cuts of meat, multiple international starters, wines of the best quality and magical cocktails that invite you to end up the evening in a casual and cheerful atmosphere that will make you come back for more.

With more than 12 years of experience in the culinary arts and after participating in the creation of well-known restaurants in Panama City, including: Camila’s, La Septima Central, Mano de Tigre Panama, among others, Chef Escalona fell in love with the idea of ​​creating a boutique restaurant, with a limited capacity for 72 people to dine, where each aspect can be controlled to provide an exclusive experience for diners.

Through a hand-picked menu that presents an exclusive choice of dishes, you can choose between the best cuts of meat, including Tomahawk, Cornish, Rib Eye and Lamb Lechal, whose complex cooking process with a Roner in controlled temperature of 70 ° Celsius for 50 hours increases its smoothness, allowing the meat to be juicier and with deeper flavors.

As a starter, make sure to try the classic Tuna Tartar with an Asian mix, avocado and wakame salad, a unique dish prepared with Chef Escalona’s original recipe; as well as the Chiricano Ceviche in Textures with modern touches and authentic Panamanian pepper sauce to enhance local flavors. In addition to the premium meats, the menu also includes salads, risottos and the catch of the day brought daily from the Fish Market to guarantee the freshness and better quality that characterizes Primitivo’s cuisine.
